Persian foods are a part of Persian culture and language
A large part of the language and culture comprises food, and traveling to the world of Persian cuisine is very impressive. What is the TahChin?
The Persian name of this food is Tah-Chin, Tah-Chin is an Iranian dish made from a mixture of rice, various types of meat (chicken is more common), yogurt, eggs, and plenty of saffron. Among Iranian dishes, Tah-Chin is one of the traditional dishes suitable for parties because of its beautiful shape, which consists of two parts: first, the thick crust of the cooked saffron Tahdig is molded into it. Second, the white Chloe poured on the pot and placed under the pool or next to it when the food is cooked complements it. The white chloe part can be removed, and in dining halls, they often make Tah-Chin in the same way as Tahdig crust, although this method is less common at home.

Contrary to the idea that they often think that the only kind of Tah-Chin is chicken Tah-Chin, it can be cooked differently.

The history of this Persian food TahChin :
There is a story that says that one day one of the cooks in the court, while preparing chicken Chloe slipped out of his hand, and the rice was spoiled. The cook, fearing punishment, resorted to saffron and added yogurt to the rice and the chicken. It is poured layer by layer; thus, the first layer is cooked.
It is interesting to know that there is a food called Ta-chin in Morocco in North Africa. Ta-chin is the Arabicized word for our Te Chin, which is similar to laplous cooked in Iran.
The properties of TahChin:
Techin is one of the nutritious and useful foods, because its main ingredients are chicken and rice; it has many properties; chicken is rich in protein and niacin, which is very useful for people with Alzheimer’s disease. The amount of fat in chicken is much lower than the amount of fat in red meat, but you must remove the skin completely before using the chicken because the skin of the chicken is very harmful. The rice in Tah-Chin contains carbohydrates and vitamin B1, which reduces blood pressure and triglycerides.
Necessary ingredients for this Persian food (chicken TahChin) :
- Cleaned whole chicken: 1/5 kilos (chicken breast 1 kilo)
- Medium onion: 1 pc
- Rice: 1 kilo
- Sour yogurt: 850 g
- Egg yolk: 6 to 7 pcs
- Ground saffron: 1 Tsp
- Butter: 100 g
- Oil Liquid: 1/2 cup
- Sarberry: 100 grams
- Sugar: 2 teaspoons
- Salt: as needed
- Pistachio slices: as needed
How to prepare chicken TahChin :
To start the work, cook the chicken with a bit of water, salt, and onion until the brain is thoroughly cooked and salty and 1/4 cup of chicken water remains.
Strain the chicken broth and cut the cooked chicken into equal-sized pieces after it cools down.
We also drain the rice we have washed and soaked in advance and remove it while cooking.
Pay attention! After preparing these steps, in a suitable and large container, considering that the rice will be poured into it and the rice should not be pressed due to the capacity of the container, we choose yogurt with egg yolk, liquid oil, saffron, strained chicken stock and We mix half of the butter with a bit of salt and stir, then add the rice to the mixture.
First, turn on the oven at a temperature of 180 degrees Celsius so that you don’t have to wait for the oven to heat up when the Tahchin is ready. Using a Pyrex dish to cook Tahchin in the oven instead of in a pot is better.
After greasing the Pyrex container with liquid oil, place the ingredients for the bottom layer in the Pyrex container as described above and press it, then put the butter on the different parts of the last layer of the bottom layer.
Finally, set a thin foil on the Pyrex container and place it in the oven for an hour until it is ready.
After an hour, this attractive Iranian food is ready; enjoy eating it!
